Blueberry Upside-down Cake
1 yellow cake mix
1 can blueberry pie filling
2 tbsp. butter
4 oz. cream cheese, softened
1 cup coconut
1 cup walnut meats, broken
Melt butter in 13-inch pan, spreading evenly. Put pie filling in pan, spreading evenly.
In small mixing bowl, combine cream cheese, coconut and walnuts. Beat smooth. Spread evenly over pie mix.
Prepare cake mix according to directions on box. Bake at 350 degrees for 50 to 60 minutes. Wait three minutes, then invert cake on large platter. Or invert each piece as it is served.
